Original Page from damndelicious.netEnsure the chicken is thawed, then cube into bite-sized chunks. Place in a 1-gallon Ziplok bag (that you've already labeled if you intend to freeze). Mince the garlic and the onion. Chop the cilantro. Add all ingredients to the Ziplok bag and smush until mixed together well.
Let chicken marinade at least 2 hours and up to overnight, turning the bag occasionally. Alternately, you can freeze immediately after. Thaw before use; during the thaw time, it will marinade!
Dump the contents into a skillet over medium-high heat. Cook, stirring often, until golden brown and the marinade has reduced, about 13-15 minutes. Then stir in 2 tbsp water, scraping any brown bits from the bottom of the skillet. Season with salt and pepper to taste.
